North of Lone Mountain, Familiar Restaurant Rooms Now Carry New Names

Walk into the foyer at 6371 Centennial Center Blvd. and look up. A ring of riveted, bunker-style paneling frames a painted dome of open sky, with vintage warplanes and a V of ducks flying across it. Las Vegas Weekly described it as the first thing you notice inside Able Baker Bomb Shelter. You notice it before the handwritten beer list or the orange and navy leather booths.

This room used to be Montana Meat Company. A short drive north of Lone Mountain, the Centennial Hills dining area has changed in a particular way this year. Both of its new sit-down spots opened in rooms that other restaurants once filled, so familiar buildings now have new names on the doors. Anyone still using last year's list of where to eat up there is working from an outdated map.

The bunker inside the old Montana Meat Company space

Able Baker Brewing started in the Arts District with a nuclear-era theme. The Bomb Shelter is its satellite restaurant and taproom, and it brings that theme north. Co-owner Randy Rohde told Las Vegas Weekly that "it took almost a year to gut the building and get it open," and that "it's been busy ever since."

The same article explains the scale of that rebuild. The interior holds artifacts on loan from the National Atomic Testing Museum, Cold War photo prints, and Able Baker's first homemade brew system. Outside there are several patios with ping pong and cornhole. The layout splits in two. One side is set up for dining with kids. The other is a bar pouring from 26 taps plus a short list of cocktails.

Arts District Kitchen runs the food. Executive chef Zebadiah Nuzzo-Todd previously worked under chef Giovanni Mauro at Monzú Italian Oven & Bar and later baked at Mother Wolf. He worked with assistant executive chef Carlos Ruiz and Rebellion Pizza on a sourdough pizza dough he calls his baby.

Prices published in July 2026, per Las Vegas Weekly:

  • Sweet & Spicy pizza, $22: 'nduja, soppressata, gorgonzola and honey, and the chef's personal favorite
  • Lemon Basil and Tartufo pizzas, $24 each: basil cream and ricotta on the first, truffle on the second
  • Atomic Street Tacos, $21: slow-roasted pork with a hoisin sambal glaze
  • Brioche cinnamon roll, $14: topped with ube gelato and cream cheese frosting

The Bomb Shelter is open 11 a.m. to 11 p.m. Sunday through Thursday and until midnight on Friday and Saturday, according to the hours Las Vegas Weekly published with the review. Those late hours fit the second-generation pattern. A new owner moves into a familiar room and gives it a different schedule along with a different menu. Current hours are at ablebakerbrewing.com.

A neighborhood tavern where Born and Raised Centennial used to be

The same thing happened at 6470 Kevin Way. Born and Raised Centennial closed in 2025, and in July WhatNow Las Vegas reported that WSKY Bar + Grill would open in that space after a remodel.

The brand told WhatNow it had "been looking to bring the WSKY brand to the northwest part of the valley for quite some time." It named September 1 as a hoped-for date and said that date was not confirmed. Today the WSKY locations page lists Centennial at 6470 Kevin Way, Suite 100, under the heading "NOW OPEN!"

WSKY belongs to Terrible's, the Las Vegas company behind the Terrible Herbst gas stations, which started the tavern brand to grow its local hospitality business. The Centennial listing shows 24-hour gaming, happy hour from 4 to 7 p.m. daily, and a reverse happy hour from 11 p.m. to 2 a.m. Sunday through Thursday. In the July article, the brand pointed to the T&T Smashed Burger, Poke Nachos, and its Jalapeno Peppers on the food side. For drinks, it named the WSKY Old Fashioned and the Blackberry Sage, either of which can be smoked. It also listed $12.95 weekday lunch specials, a price from July that is best confirmed in person.

Taken together, the two openings change the late-night picture up north. The Bomb Shelter serves until midnight on weekends, and WSKY's reverse happy hour runs until 2 a.m. on weeknights. Both are inside buildings that many Lone Mountain residents have driven past for years.

Same addresses, new names

Address Previously Now Status as of mid-October 2026
6371 Centennial Center Blvd. Montana Meat Company Able Baker Bomb Shelter Open
6470 Kevin Way, Suite 100 Born and Raised Centennial WSKY Bar + Grill Open
8426 Farm Rd., Suite 110 None reported Jet's Pizza Open
5655 Centennial Center Blvd., Suite 170 None reported CAVA Signage up; in August, targeted before the end of 2026

Both reused rooms are already serving customers, while the two addresses with no earlier restaurant on record hold a pizza counter and a fast-casual chain that is still preparing to open.

Pizza at Durango and Farm

Jet's Pizza is farther up Durango, at 8426 Farm Rd., Suite 110, on the northeast corner of North Durango Road and Farm Road. WhatNow Las Vegas reported it open in August 2026. In late September, News 3 covered the Centennial Hills store as the chain's third location in the Las Vegas area.

It's a different kind of pizza from the Bomb Shelter's sourdough pies, and that difference is useful. Within a few miles of each other, there's now a sit-down taproom pizza with $22 to $24 specialty pies and a Farm Road counter for a quick weeknight pickup.

CAVA has signage and a year-end target

CAVA picked 5655 Centennial Center Blvd., Suite 170, for its first restaurant in Nevada, and signage went up in August. The Las Vegas Review-Journal reported on August 12 that a company representative said CAVA "does intend to open before the end of this year," and also said it was "a little too soon to share an exact date." The company pointed fans to cava.com and the CAVA app for updates.

The Review-Journal noted that CAVA has more than 470 locations in the U.S. and is known for Mediterranean bowls with chicken, steak, falafel, lamb, or salmon. Job listings for a "CAVA-Centennial Gateway" location at this address have appeared online, including a grill cook role. The window the company described in August ends December 31, and the CAVA app is where it said the date would appear.

Until CAVA opens, the newest dining near Lone Mountain is in the rooms that changed hands: Able Baker Bomb Shelter at 6371 Centennial Center Blvd. and WSKY Bar + Grill at 6470 Kevin Way.
